hi guys,

i come with hat in hand, bashful that i've been away so long.  i've tried to jump back in a few times, but have always felt awkward at my long absence, and then felt that i'd missed too much to catch up. 
the reason for my long vacay from the forum is that i've started my own business.  i'd talked a bit about my potential career paths in here, well the DH finally pushed me to commit to a field, so i'm making gourmet truffles and chocolate confections.  i've been so busy working towards that, that many of my other pursuits have fallen away.  i'm not very business minded, and it really is a stretch for me to build my own shop, but i'm starting small and working up. 
now that the holiday rushes are behind me, i'm hoping to get back into the groove here if all you lovely ladies and gents will have me back.

Yea! SV, I'm happy to see you here. Most importantly, congratulations, kudos and good karma to you regarding your new business endeavor. I know how time-consuming and all-encompassing it must be. Gourmet confections sounds WONDERFUL. I know you will have huge success, with a bunch of diamond junkies behind you!

Goodness, never worry about how you'll be received after an absence here... for a variety of reasons, everyone needs a break (haven't we all done it...? Yes). thanks so much for the warm greetings, this place is the best. 
it's really exciting to try something so new, and to be getting a lot of positive feedback from customers about my product, i'm nothing special, i just use the best chocolate i can afford (mainly vahlrona and el rey) and let the ingredients do the work.

david i would love to work with you!  but i've been saying that since i first stumbled upon DBL haven't i?  Cheesy you can see what i've been doing at my site: http://www.mysweetallison.com and we can totally figure something out!  Smiley  the DH helped me a lot with the site (he's my hacker-lawyer-husband supreme) and i've just been updating and hopefully making it look good, constructive crit is always welcome though, this is my first site ever.

OMC - i haven't, i was just looking at their site, seems very good.  i'm always looking for different chocolates to try and because of where i live in louisiana, it's actually nearly impossible to sample high end chocolate.  i'd be super interested in trying out Felchin, i might have to take you up on your offer!

cherrypie - cardamom's actually one of my favorite flavors, so i was really excited to be able to make my cardamom white chocolate truffle and show people how amazing cardamom is.  especially where i'm living, lots of people haven't even had real indian food so cardamom's not a familiar spice to many.

I must say it's probably the best chocolate I have tasted - ever, even though it is a "chocolate only" factory, so no fancy products like pralines, truffles or patisserie.

Let me know what you'd like to try. The factory shop sells the complete range of production, but some things come in large packages only; e.g. most chocolate types come in 2 kg (or larger) bags of "coins" ready for melting - or eating.

I could ask them if they can put together a sampler with a dozen varieties, say about 100 gr each, but don't know what they would say. Some stuff I'm happy to break up for you to try and keep the rest for us, but not a dozen varieties at once!

Retail price is between USD 12-25/kg depending on variety and cocoa mass %; I am sure that trade gets better prices (even I manage a quantity discount when shopping for Christmas).

Holy crap... my mouth is so watering. 

The drinking chocolate sounds fabulous.  I had some at a French place near by and OMG it was heaven!!!  The marshmallows look wonderful too.

And does the toffee

I love dark chocolate best but I think I would like the milk, burnt caramel and mint chocolate truffle.  I can't quite taste the cardamom but I have some here (or had some at least not too long ago) so I might have to smell it with chocolate to see what it would be like.

cool OMC, i'm looking at their website right now, and at their Us distribution network, it looks like i'd have to buy 5-10kg which is not the best way to sample.  i'd mentioned before i can't really find high quality chocolate, so i made a large order of belgian chocolate to start working with before i'd ever tasted, based on reviews i'd read online, and i ended up really not liking their dark chocolate so i switched to venezuelan and french for the time being, but i am spending more $$.  can i look into their type and get back to you?  i think maybe 3 different kinds, .5kg each would be a great way to try.

squiggles!  i do ship, for friends.  Smiley  so far i've only done my purses of 6 truffles shipped, since i wrap those individually in foil, i'm afraid to ship the 16 count box, since they'd get all tumbled, but i'm thinking about figuring out a way to ship those too.  the hot chocolate and marshmallows are easy to ship since i dont' have to worry about getting tossed around or too hot.

Sure. Many of the more popular crus are also available as 0.5 kg blocs. Not as easy to handle and melt as the coins, but OK to ship.

One idea on the packing: what about using shredded paper packing to fill the box, together with some rigid/semi-rigid foam or cardboard to put things into some initial position?

thanks OMC, i'm looking into the bars, looks like i can find a few of the .5kg bars, but i don't think any of those are their crus, so i may have to bother you to hit 'em up for me.  Smiley  the issue with the packaging is that it has to be food safe if it's going to be inside the box with my chocolates, so i can't use any old paper, i was thinking about it, and i could probably use a second candy insert to make sort of an "egg crate" inside the box, won't look very nice, but would probably protect the truffles reasonably well for transport.  the stupid packaging is such a headache and expensive too!  Sad

squigs: for my six count 'purse' you can choose any two flavors, and for the 16 count box you get 8 different flavors, i have a generally standard assortment, but you can also choose the flavors you want, less than 8 if you want like 4 dark chocolates and 10 earl grey milk chocolates and two white chocolate cardamom.  as an example.  Smiley

There is food-grade shredded paper/plastic for sure; that's what they use for packaging truffles (not chocolate ones, tuber magnatum) in luxury stores. Of course the chap at the farm who goes and finds them gives them to you wrapped in yesterday's newspaper, if at all. Grin

Thanks SV.  I have bookmarked your site.  You might be hearing from me after I get past the 2nd baby shower I am hosting.  Just trying to be "good" about eating when I will be having a lot of junk food in a short amount of time.  Maybe after my birthday next month, though the drinking chocolate would be more fitting for winter... hmmm....

I would give my right arm for a box of these! I don't suppose they'd travel to Scotland, but next time I'm in the US, I'm going to have to try them. Earl grey, gin and lime, burnt caramel and smoke (especially that one!) lime and lemon salt and single estate truffles will be my pick - they sound like heaven on earth. No way would six be enough, I suspect. DJ and anyone else from the weightloss thread, if you don't want to know how my diet ends, look away now. Grin

OMC, I know it's meant to be for confectioners, but I'd eat a bar of the couverture just as it is. It looks pretty much perfect in the photos. Drooling here!

Jen - happy to ship to Scotland as well... and I'm not on commission, so let me know if you want something. I know it doesn't help much with weight loss, but the only time I managed to stick to a diet I allowed myself 10 gram of 70-85% dark chocolate a day, and it worked just fine.

Actually, I'd love to take you up on that if it isn't a pain for you. I find that a small piece of really high cocoa chocolate hits the spot and stops me eating a ton of cheap stuff. It works well when I'm cutting back on food!

Can you buy reasonably small amounts, or does it need to be a big order? A little Grand Cru should go a long way (unless my theory breaks down and I shovel down the lot within a week, not a possibility that should be discounted out of hand. Grin)

I can get coins in 2kg bags (all crus) and many of the best crus - but not all - in 500 gr blocs. The problem with the blocs is that it's difficult to break them into reliable size pieces - they are really meant to be melted and recast into something smaller.

What sort of flavour intensity and % cocoa were you thinking of?

I totally agree with this - I do well if I allow myself a couple of squares of dark, dark chocolate a day too.  For some reason, it's the only thing I seem able to moderate.  Anything else, it's all or nothing.  Weird but it works for me!  The higher quality, the better too.
